Sugar Mountain University is a three-tier program where employees are first introduced to a variety of curriculum that directly translates to their day to day jobs with Sugar Mountain, from gaining an understanding of the additive-free, pure food movement to digging deep into Washington’s burgeoning wine community. From there, our students move into the second and third tier classes, immersing themselves in the curriculum through hands-on experience.

 

Class Level Descriptions

Classes fall into five areas of curriculum:*

These courses take students through various elements of food/cooking techniques and flavor profiles. At completion of all levels, students will know different food preparation styles, how to identify components of a dish, culinary terms, flavor profiles and have had hands-on cooking experiences. Students will become well-versed “foodies” and truly understand the Sugar Mountain flavor profile and standard: boldly flavored, visually appealing, brand appropriate.

Sugar Mountain University wine education is designed to acquaint students with a brief overview of wine terms, styles, varietals, pairing and etiquette. As students move through the program, they will venture into ever more complex ideas with tastings, winemaking, grape crushing, barreling and bottling, tours, etc. By the end of the course, students should be able to provide accurate descriptions of various wines using proper terms and common descriptors, make educated pairing suggestions based on wine type and individual style, correctly present bottles to and open bottles for a guest, and pour samples/glasses of wine in the manner suitable to the working environment.

Aahh… Cheese!  At different levels, students will learn to recognize different types of cheese and pair them appropriately with foods. They will also become familiar with the history of cheese, as well as take a virtual and live tour of the artisan cheesemaking process. Farm tours and hands-on cheesemaking round out the curriculum. And, of course, lots of tasting!

How much food is in your food? Pure food is the base philosophy for all Sugar Mountain products, concepts, recipes and values. Students will become nutritionists of sorts through workshops, first-hand interaction with the source of our foods and how they are produced, and the opportunity to get into the community and teach the pure food philosophy to others. Just when you thought you knew what you were eating…

From a first-hand tour of each component of our business to customer service education, management training and recipe and concept development, these courses give the students a well-rounded overview of the building blocks that operate the Sugar Mountain business. As students dig deeper into this curriculum, they will have the opportunity to take continuing education courses to enhance their future business acumen.
